Red Russian Kale is considered to be a highly nutritious vegetable, with powerful antioxidant properties.
It is very high in beta carotene, vitamin K, vitamin A, vitamin C, lutein and zeaxanthin and reasonably rich in calcium. As part of a balanced diet, it is said to have particular benefits in helping to prevent age related macular degeneration, the degeneration of the eye in old age.
So for those of others with a few more miles on the clock it’s probably a good idea to include it in our diet.
In fact, the particular health benefits of kale were known during World War II, when the cultivation of kale in the UK was encouraged by the 'Dig for Victory' campaign. The vegetable was easy to grow and provided important nutrients to supplement those missing from an ordinary diet because of rationing.
